Beer Stewed Trotters
1.
Chop the pig's trotter into small pieces. If you can't chop it yourself, let the merchant help you chop it. After returning, scrape off the surface and clean it.
2.
Put it in a pot of warm water and boil, and then pick it out from the boiled place, so you don't need to flush it again;
3.
Two cans of beer, green onion, sliced ginger, star anise, cinnamon, pepper, dried red pepper, rock sugar are ready;
4.
Pour a little oil in an iron pan, melt the rock sugar on a low heat, then add cinnamon, star anise, and ginger slices to fry to create a fragrance;
5.
Pour the pig's knuckles into the pot and continue to stir-fry over medium and low heat for coloring;
6.
Put the green onions, red pepper, and Chinese pepper into the pot. After most of the trotters are colored, pour a little soy sauce and some salt;
7.
Pour the beer into the pot, I used less than two cans, and it’s fine without the trotters;
8.
After the beer is boiled, turn to low heat, close the lid, and simmer slowly;
9.
When there is only a little beer left, you can turn off the heat and cook! Eat soft waxy hot and slightly chewy when dry. It is really a good dish for drinking and beauty!
Tips:
1. If you want to shorten the time, you can use a pressure cooker to press, but the taste and texture are discounted than this;
2. Put a few dried chilies to make your appetite better; rock sugar adds flavor and color, and the skin is bright.
