Both "boiled fish" and "boiled pork slices" are classic Sichuan dishes. In fact, according to this method "cottage", many varieties of boiled dishes can be made. Follow this method today, choose fish head as the main ingredient, and cook a dish. So it is called: "Boiled Fish Head".

Boiled Fish Head

1. Main ingredients: Fathead fish head, Pixian bean paste, green onions, ginger, garlic

2. Remove the gills, teeth, and gill skirts of the fish head, wash and set aside

3. Prepare green onions, ginger, garlic

4. Heat oil in a pan, add fish heads, and fry on medium to low heat

5. Fry until the epidermis is browned, serve and set aside

6. Leave the bottom oil in the pot, add half of the green onion, ginger, and garlic to fry until fragrant, then add the Pixian bean paste, stir-fry the red oil on low heat, and cook into the cooking wine

7. Add some light soy sauce

8. Add water, boil, simmer for 2 minutes

9. Put in the spare fish head

10. Bake for about 10 minutes, turning it over in the middle, and add salt and sugar to taste

11. Cook until the fish head is cooked through, remove and put in a bowl

12. Bring the original soup to a boil, add MSG for freshness

13. Pour it into the bowl

14. Wash the pot, add more oil to heat, add the other half of the onion, ginger, and garlic and sauté until fragrant

15. Pour it on the fish head and serve. Sprinkle some sesame seeds and serve

Tips:

1. After the fish head is fried, it will have a fragrance and remove the fishy smell.
2. When frying the onion, ginger and garlic at the end, you can also add some crushed peppers.
3. The shape of the fish head can also be cut and cooked.
