Boiled Fish with Perfume

Remove the scales of the carp and wash it.

Pick and wash the soybean sprouts for later use.

Prepare sesame peppers, crushed peppers, and dried peppers.

1 tablespoon pickled peppers, 1 tablespoon bean curd sauce.

Lay the fish flat and use a sharp knife to separate the two large pieces of fish meat and the fish steak.

Continue to slice the two large pieces of fish into the right amount of fish fillets.

Add cooking wine, salt and starch to marinate for 20 minutes.

Divide the fish head in half and chop the fish steak into pieces.

Put an appropriate amount of oil in the pot, add the fish head and fish steak and stir-fry until the color changes.

Add water, boil, add cooking wine and green onion ginger.

Reduce heat to low heat until the soup is milky white.

Separate the pan, add oil, fry the sesame pepper and crushed chili, remove and set aside.

Add the washed soybean sprouts and stir-fry until they are broken.

Spread the fried bean sprouts on the bottom of the large container.

Add oil to the pot, add pickled peppers and bean curd sauce and stir-fry to produce red oil.

Pour in the cooked fish head soup and bring to a boil.

Boil in the marinated fish slices.

Add salt and cook for 2 minutes.

Pour the boiled fish into a large bowl covered with soybean sprouts.
20.
Sprinkle on the boiled fish, fried fragrant sesame pepper and chopped chilli.
21.
Put the oil in the pan, heat and sauté the dried chilies.
22.
Just pour hot oil on the boiled fish.
Tips:
I didn't buy grass carp, so I had to use carp instead. It's best to use fresh grass carp. The direct consequence after eating boiled fish is a sore throat and getting angry, because these foods are mainly wet, prone to phlegm and heat. It should be dissolved with chrysanthemum tea. If you often eat boiled fish in winter, drink at least 1000 ml of water a day to relieve your anger.
