Boiled Tofu Fish

One silver carp, remove the scales and internal organs, and clean it. Use a knife to slice the fish into thin fillets one by one. The fish heads are apart and the fish bones are cut into pieces.

Cut ginger into cubes

The sliced fish fillets are mixed with ginger, cooking wine, salt, and bean paste and marinated for later use

Cut garlic and green onions into sections, and chop pickled peppers

Put the rapeseed oil in the wok, add the pepper and chili to fry until fragrant, remove the minced and set aside

Put oil in the wok, add bean paste, garlic, ginger, and chopped pickled peppers and stir fry for red oil

Add broth or water, add the beaten green onion knots, add the fish head and fish bones to a boil

After the water boils, use chopsticks to put the fish fillets into the pot one by one

Put an appropriate amount of salt in the pot of tofu, simmer for 15 minutes, and pour it into the container.

Take another pot and add cooking oil to heat

Pour the cooked fish fillets into the container, sprinkle the fried chili peppers, peppercorns, and green pepper powder on top, pour the hot oil on the garlic and peppercorns, and you're ready to eat
Tips:
1. You can choose the tofu to be served at will, such as Japanese-style tofu, etc.;
2. Adjust the amount of dried chili and bean paste according to your own taste;
3. It is recommended to use rapeseed oil, so that the cooked vegetables have the true Sichuan flavor.
