Braised Bamboo Shoots with Red Grain

Remove the bamboo shoots, cut into slices or small pieces, and cook in a pot of cold water

Rinse with cold water, take an appropriate amount and set aside (the rest can be soaked in a cold water dish for easy access next time); heat the pan with cold oil, add garlic slices and red lees, turn to low heat and stir fragrant

Add bamboo shoots and continue to stir fry for a while, add a little white wine, sugar, salt and a little water; bring to a boil, turn to medium-low heat and simmer to collect the juice, pour a few drops of sesame oil, and add some chicken essence.
