Braised Chicken with Mushrooms
1.
Soak the mushrooms in water for about 1 hour, change the water several times in the middle, wash it several times, remove the stalks, drain the water, set the plate, put rock sugar and a little oil, put it in a pot and steam, and boil the water for 18 minutes.
2.
Put a little oil in a hot pan, put the ginger and garlic (sliced garlic) into the fry a few times, put the chicken pieces in a medium heat and stir fry, about 2-3 minutes, the chicken skin will be slightly yellowish.
3.
Transfer the chicken to a casserole, add water, about 2 bowls, cover, and turn the water to a medium-low heat and simmer for 20 minutes.
4.
After 20 minutes, add salt and light soy sauce, stir, add the mushrooms, stir again, cover and simmer for 5 minutes.
5.
Then open the lid and turn to high heat. Stir with chopsticks while simmering for about 3 minutes. The water is less and thickened. Put the green onion, cover for 5 seconds, and serve.
Tips:
Steam the mushrooms first, then fry the chicken and stew the chicken, so that you don’t waste time. Steaming the mushrooms with sugar will taste better, and the chicken will not absorb too much sugar, making the chicken sweet too!
