Braised Donkey Meat

Ingredients: Soybean paste. White sugar. Salt. Shaoxing rice wine. Light soy sauce. Star anise. Nutmeg should be crushed. Pepper. Ginger should be crushed. Chives.

Soak the donkey in water for 12 hours to soak the blood. Change the water several times in between. Add water to the pot, add the donkey meat, and pour an appropriate amount of rice wine. Bring to a boil. After boiling, continue to cook for 5 minutes, remove and wash.

Put the blanched donkey meat into the pot and pour water.

Put the soybean paste, sugar, salt, rice wine, light soy sauce, pepper, star anise, nutmeg, ginger, green onion, into the pot with donkey meat.

After the high heat is boiled, turn to medium and low heat and continue to cook for an hour and a half. Turn off the heat. Simmer in the pot overnight for better taste.
