Braised Duck Wings
1.
Clean the duck wings and prepare the braised ingredients. Here I like to use the braised pork bun with star anise tangerine peel, black pepper, fennel, etc.
2.
Add salt, cooking wine, and soy sauce to mix evenly, then marinate for 20 minutes for tasting.
3.
After marinating for 20 minutes, pour 1L of water in the soup pot, which is about the amount of water that can be used to cover the duck wings.
4.
Put the duck wings into a soup pot with cold water, and pour the marinade, turmeric, marinated cooking wine and soy sauce soup into the pot. Cover the pot and cook for 20 minutes, taking care not to overdo it.
5.
After boiling for 20 minutes, lift the lid and remove the floating layer of floating powder with a colander.
6.
Skim out the floating dust, which is the scum of duck wings, as shown in the picture
7.
Remove the floating powder, as shown in the picture, turn down the heat and cover the pot to continue cooking. In the meantime, be careful to cook that it is easy to overflow. When it is almost overflowing, remember to lift the lid to prevent the cooking from overflowing.
8.
Cover the pot and cook as shown in the picture until the duck wings are marinated until the soup is thick and ready to eat. The cooking time is about 30 minutes.
9.
If you find that less water is added during the cooking process at first, and you feel that the duck wings are not cooked badly or the duck wings are too old to cook, you can add two bowls of hot water to continue cooking. It will not affect the taste of the duck wing braised soup. Remember to add hot water instead of cold water or cool boiled water.
10.
The soup is cooked until thick and ready to be out of the pot, as shown in the picture. This time adding turmeric soup will be close to yellow and milky white.
11.
Finally, put the finished picture on the plate, you can start eating.
Tips:
When adding water in the middle, be sure to heat up the boiling water, and always pay attention to avoid overflowing when boiling. That would make the stove very dirty, and the soup would be spilled everywhere.
