Braised Fish

Prepare the ingredients: Use a knife to scrape a few small cuts on the fish at an angle. Spread flour (a little), soy sauce, salt, oil, rice wine, and sesame oil in sequence. Spread it evenly. Remember to put on the fish belly, and then stuff the fish belly. Slice ginger to get rid of fishy. (Home-brewed rice wine will be more fragrant. It is also possible to use cooking wine instead of rice wine.) Marinating for half an hour (time can also be controlled by yourself)

Prepare ingredients: coriander, green onion, red pepper, plan, shiitake mushrooms

Heat the pan, pour the oil, saute the garlic, add the marinated fish, (do not turn the fish frequently) and cook patiently. Add cooking wine during the cooking process. When the fish is fried on both sides until golden, pour a little vinegar. Sprinkle with a little sugar. (If there was less salt in the marinated fish at the time, you can add more now. I used to marinate a lot, so I donβt put it now.)

Add shiitake mushrooms, dried chilies, red peppers, green onions, and finally sprinkle with coriander and shallots, and top with sesame oil.
