Braised Herring with Scallions

2 herrings, green onion, ginger and garlic.

Hit a diagonal knife on the herring's back.

Heat oil, fry fragrant ginger and garlic slices.

Add the green onion and saute until fragrant.

Put in herring.

Cook into vinegar and cooking wine successively.
