Braised Lamb

Cut the mutton into pieces, put it in cold water, add an appropriate amount of cooking wine, 2 slices of ginger and blanch it in water. After the water is boiled, remove it and set aside.

Put a little oil in the pot, add rock sugar, aniseed, cinnamon, ginger and chili and stir fry.

Add the mutton and stir fry after it's fragrant

Add the dark soy sauce and stir-fry the light soy sauce.

Add the right amount of boiling water, be sure to add boiling water. After simmering for 80 minutes, add the diced carrots and continue to simmer for 30 minutes to turn off the heat.

Out of the pot!

Be sure to add hot water when adding water to simmer
