Braised Lamb

Cut the mutton into pieces, rinse well, put clean water in the pot, cook the mutton under cold water, boil over medium heat, and cook for 5-10 minutes. Scoop out the mutton after the scum is boiled, rinse with running water and drain. Moisture, pour oil in the pot and stir fry the lamb.

Add light soy sauce, dark soy sauce, star anise, yamana, bay leaves, cooking wine, and dried red pepper and stir well.
