Braised Lamb Chops

Cut fresh lamb chops into small pieces. Soak in blood for half an hour. Add cooking wine. . Boil the excess blood with clean water. How far is it cooked? Boil the water for five minutes after boiling.

Prepare the spice bag. I don't want too much aniseed to suppress the aroma of the lamb itself, so I used fennel and bay leaves.

Heat the pan to get oil. Add pepper, garlic and ginger slices to taste.

Add Pixian bean paste and stir fry to get the red oil.

Add lamb chops and stir-fry evenly, add cooking wine to remove the fishy smell.

Add light soy sauce, dark soy sauce, oyster sauce, stir fry for color.

Put the ribs and the soup into the pressure cooker. Put in the spice bag.

Add 1/3 of the water that has submerged the ribs, this is a little more water. Add the hot pot bottom material. And pepper.

Finally, we put red peppers and carrots. Put the lid on the pressure cooker and start cooking.

Turn after the pressure cooker vents. Medium heat. Simmer for half an hour. If you have time to use a casserole, this should be simmered for more than an hour.

Lift the pot and sprinkle with chopped green onions.
Tips:
The side dishes inside can be matched at will. Potatoes and onions can be used. I want this dish to look good in color. It goes with this red, so red peppers and radishes of the same color are used.
