I have always thought that loach is a delicacy only found in Jiangnan;
At the end of the paddy field in the south of the Yangtze River, there are drainage canals. The long-flowing water brings sedimentation, forming a thick silt layer at the bottom of the canal, and here is where the loach hides;
Usually you can't see the loach. Every spring, the old man who manages the canal in the village will come to clear the silt. When the silt is dug up one by one, the mud loach that has nowhere to hide is revealed; every time it comes here At that time, my sister and I would follow the old man, waiting for him to throw the loach on the ridge, then grab it, throw it into the bucket, and make a delicious meal.

Braised Loach

1. Wash the loach and set aside. Pay attention to the internal organs in the belly. Peel a small dish of intact garlic cloves, slice ginger, and cut green onion into sections for later use.

2. Pour a little oil in a pan, add green onion, ginger, garlic, stir-fry on low heat until the aroma comes out, then pour in the loach and stir fry

3. After stirring several times, add cooking wine, light soy sauce, dark soy sauce, oyster sauce, add water until half of the loach is submerged in the water, then simmer on high heat

4. After boiling, turn off the heat and simmer for about 20 minutes, then collect the juice on high heat, pick up the pot, and serve a delicious dish.
