Braised Noodles with Beans
1.
Prepare the ingredients as shown in the figure, add a little salt and water to the shredded pork and stir well (the best is to use pork belly. My kids don’t like pork belly and use shredded pork instead, plus lazy shredded pork can be bought without cutting);
2.
Cut tomatoes and onions into small pieces; slice ginger and peel off garlic; grab starch from the shredded pork, stir fry with a little oil and set aside;
3.
Pour a little more oil in the pot than usual for cooking, pour the oil into the beans and stir-fry, stir-fry until it is broken, pour in the fried shredded pork;
4.
Pour an appropriate amount of soy sauce along the side of the pot, pour in a small half cup of boiling water for about 5 seconds, and let the pot roll vigorously for 2-3 minutes;
5.
At this point, add sliced ginger, garlic cloves, chopped tomatoes, and onions and stir fry a few times;
6.
Seasoning, add a flat spoon of sugar, a small half spoon of salt, an appropriate amount of pepper powder, a little oil consumption, add enough water to barely eat the vegetables, and add star anise, grass fruit, grass cardamom, the water is turned on and off;
7.
Spread the noodles flat on the dish, being careful not to get close to the side of the pot to prevent sticking to the pot, cover the pot and stew the noodles;
8.
When simmering noodles, be careful to turn the wok so that different noodles of the pot are heated on the fire to prevent the bottom of the pot from being battered; observe that there is one third of the soup left, turn the whole noodles over and continue simmering for a while;
9.
Don't let the soup dry, taste the taste; prepare half a bowl of boiling water, add some sesame oil, if the color of the noodles is not enough, add some dark soy sauce to the bowl; if the taste is weak, add some salt to the bowl and pour it from the middle of the noodles. Into the pot;
10.
Keep stirring the noodles and vegetables on a low heat, so that the noodles can fully absorb the remaining soup in the pot;
11.
Take out the pan and serve.
Tips:
1. Regarding the side dishes, you can add shredded carrots. I personally think that adding carrots to other dishes is not delicious; 2. The portion in the recipe is for two adults and a 5-year-old child, and the portion size should be increased as appropriate; 3. Remember to remember when braising noodles Turn the pot so that the bottom of the pot is not kept hot; 4. If it can be spicy, you can put one or two dried chilies when you stir fry the beans.
