Today’s braised bean curd noodles do not contain meat. They are seasoned with chili, and the fragrance is slightly spicy. In fact, I don’t like meat, so this is just right.

Braised Noodles with Beans

1. Wash the beans and break them into approximately 5 cm long sections

2. Heat oil in a wok, deep-fried fragrant ginger and pepper

3. Add the beans and stir fry until the beans change color

4. Add water, the water is higher than the bean noodles, add salt and oyster sauce at the same time, boil and simmer for 15 minutes

5. I used my own hand-made noodles, you can use any noodles

6. After about 15 minutes, put the noodles on the surface of the beans and change the stove to high heat

7. Use chopsticks to scatter the noodles, close the lid, and simmer over low heat after boiling, using chopsticks to move twice in the middle

8. Chopped fresh red pepper, chopped green onion

9. Simmer for about 7 minutes, lift the lid, add the chili and green onions, and add the chicken essence at the same time

10. Stir well

Tips:

I roll the noodles with my hands. You can buy ready-made ramen noodles. If you use dried noodles, add a little more water to the stew. It is best not to add water in the later stage. Add enough water at a time, and the taste will be bad after adding water.
I didn't put soy sauce in it. Those who like the taste of soy sauce can adjust the soup according to their own taste.
