Braised Noodles with Homemade Beans

Ingredients: 250 grams of hand-rolled noodles, 350 grams of beans, 100 grams of pork belly
Accessories: 2 teaspoons of light soy sauce, 1 teaspoon of dark soy sauce, 5 cloves of garlic, 3 slices of ginger, 1 scallion, appropriate amount of salt

To process the ingredients, wash the beans and remove both ends, break into inch pieces, cut the pork belly into thin slices, mince garlic, and chopped green onions.

Put a little cooking oil in the pan, add the cut pork belly and stir-fry until the pork belly is transparent and spit in oil, the edges are curled, and the surface is browned. Add the chopped green onion, ginger slices, and minced garlic to fry to get a fragrance. (Reserve half of the minced garlic for last use)

After frying out the flavor of the seasoning, cook the cooking wine along the side of the pot, and then add 1 teaspoon of dark soy sauce. Stir 2 teaspoons of light soy sauce and stir-fry evenly until the pork belly is colored.

Spread the prepared noodles evenly on the beans, turn to low heat, cover the pot and simmer for about six or seven minutes.

Observe the noodles from time to time. When the noodles are simmered for six or seven minutes, check that the soup in the pot is about to dry, evenly pour in the soup that was just taken out, cover the lid and simmer for a few minutes.

Simmer again until the soup is almost dry, add the remaining half of the minced garlic, mix the minced garlic and the braised noodles with chopsticks. Braised noodles with beans, minced garlic is added twice to make it more fragrant.

Tips:
1. It is best to use fat and lean pork belly for the stewed noodles, so that the taste will be soft and delicious.
2. Add water after the beans are stir-fried, and control the amount of water by yourself. First of all, at least there must be no beans, or even more. The noodles are also very absorbent. When the noodles are braised with too little soup, it is easy to dry the soup, and the noodles will be hard to eat. But don't add too much, soak the noodles directly in water, it will be too sticky to eat.
3. When braising noodles, check if there is any soup in the pot after a few minutes. When there is no soup, pour the soup on the noodles. When pouring the soup, pour the soup slowly and evenly on the noodles. All the noodles are dipped into the soup
