Braised Pig's Trotters with Soybeans and Peanuts

1. Soak peanuts and soybeans overnight. Keep it in the refrigerator in summer

2. Cut the processed pig's trotter into pieces, blanch it and transfer to a saucepan

3. Add enough water to the pot, pat a piece of old ginger into the saucepan, put the soybeans and peanuts into the stew

4. After about an hour of simmering, the pig's feet are soft and waxy, and can be easily penetrated with chopsticks. Transfer the pig's feet together with the soup, soybeans and peanuts to an iron pot or casserole. (Don’t have too much soup, just don’t have the ingredients)

5. Add soy sauce, rock sugar, and some salt

6. Cover and simmer until the juice is dry

Tips:

1. To make the braised pig's trotters with sauce, you must choose better quality soy sauce. The seasoning determines the taste of the dish to a certain extent.
2. This dish uses the method of stewing and then braising, so it will only be simmered for about an hour, and you can easily penetrate the trotters with chopsticks.
3. The amount of rock candy can be increased or decreased according to personal preference. I don't like it because it is too sweet, so I put less.
