Braised Pork

Wash the pork belly and pluck off the remaining pig hair. If the pig hair is too much, peel it directly, and then cut it into mahjong size

Put the cut pork belly directly into the pot (no need to put oil), and slowly stir the oil on low heat (put the fatter in the middle of the pot), the process is about 20 minutes. Stir the pork belly and set aside, leave the bottom oil in the pot

No need to wash the pot, directly add the dried chili, star anise, grass fruit, ginger slices to fragrant

Pour in the stir-fried pork belly and stir-fry slightly in soy sauce

Then add hot water, add dark soy sauce, salt, cover and boil on high heat, then turn to low heat and simmer for 40 minutes

Then add carrots or potatoes, cover and continue to simmer for 20 minutes, then open the lid and add rock sugar to collect the juice
Tips:
1: There will be a sticky pot when the meat is stir-fried, don’t care, it will be mixed into the soup later
2: When adding clean water, be sure to use hot water
3: I prefer to use potatoes with braised pork
4: The stir-fried oil is used to stir-fry green vegetables, which is quite good
