Braised Pork

Wash the pork belly and cut into chunks

Boil the water in the pot and remove it, about 3-4 minutes

Prepare green onions, ginger, pepper, chili, etc.

Put oil in the pan, put the green onion, ginger, chili, pepper, etc. into the pan and fry until fragrant, add an appropriate amount of rock sugar, and fry until the color is changed and thick

Add the blanched pork belly, continue to stir fry to color, add appropriate amount of oyster sauce and braised soy sauce, the pork belly must be drained, if the water in the pork belly is not drained, there will be oil splashes (don't ask how I know...)

Stir-fry until the surface is slightly yellow, add water, no meat, add cinnamon and other spices, add appropriate amount of cooking wine, and cook over high heat

I prepared two boiled eggs before, which can be boiled together in the pot

After the high heat is almost boiled, turn to low heat and simmer slowly. Since there is no pressure cooker at home, the process is long, about an hour. During this time, if the water is dry, add water appropriately until the pork belly becomes soft and rotten. Add salt before serving.

Set out the pan, cook a handful of small rapeseed, then remove the egg and cut it in half, which is a bit like braised pork rice

The first time I tried to cook braised pork, I felt that the stew was not soft enough, and it didn’t melt in the mouth. It will be improved in the future. Since there is no pressure cooker at home, I can only use a wok. If there is a pressure cooker, the cooking time will be greatly shortened. The braised pork that comes out will be softer. Also, as a newbie in the kitchen, splashing oil in the pot is undoubtedly terrifying, making me, a pregnant woman, jumped up in fright...
