Braised Pork Belly with Pearl Mushroom

Soak the shiitake mushrooms and set aside.

Wash the pork belly and cut into mahjong pieces.

Pour water into the pot and put the pork belly in a pot under cold water.

Boil for another 5 minutes after the water has boiled.

Take out the drain and set aside.

Peel and slice ginger, cut green onion into long sections, prepare rock sugar and spices.

Pour oil in the pot and add rock sugar.

Slowly sauté the sugar into a caramel color.

Pour the meat into the pan and sauté slowly to color it.

Stir-fry for a while and stir-fry the excess fat.

Add shiitake mushrooms, light soy sauce, dark soy sauce, green onion, ginger, spices, boiled water soaked in ingredients, cover and simmer for about 1 hour.
12.
Add a little salt at the end.
13.
Turn the heat to collect the juice.
