Braised Pork Knuckle with Soy Beans

Wash the pig's feet, shave off the hair, and cut into pieces.

Ginger slices and star anise.

Soak the soybeans one hour in advance.

Put an appropriate amount of oil in the pot, stir-fry the ginger slices for a fragrant flavor, add the pork knuckles and stir-fry until slightly yellow.

Add soybean paste, crushed red fermented bean curd and oyster sauce and stir fry evenly.

Add appropriate amount of light soy sauce and dark soy sauce and stir fry evenly.

Add appropriate amount of salt and white sugar cooking wine and stir fry for a while to make the pig's feet taste delicious.

Finally add water and star anise, cover tightly and bring to a boil. (The amount of water is less than half of the pig's feet)

Bring to a boil and add the soaked soybeans.

Cover tightly and boil. If you don't have a pressure cooker, bring it to a boil, turn to low heat and simmer for about 45 minutes until the skin is soft and waxy.

After boiling, put the pig's feet into the pressure cooker.

After the high heat reaches the pressure cooker makes a sound, turn to low heat and simmer for 20 to 25 minutes to turn off the heat, and then open the lid after the pressure cooker cools automatically.

Finished product.
Tips:
This pig's knuckle is relatively large. If there are few people, it is enough to buy half of the pig's knuckle.
