Braised Pork Knuckles with Peanuts

Wash the red peanuts in water, put them in a pot and boil for an hour, using a pressure cooker faster.

Then add a spoonful of salt so that the peanuts will taste better.

Put water in the pot, pour the trotters, add sliced ginger, green onion, two spoons of cooking wine and bring to a boil, then wash it with cold water again, and boil it in water for 30 minutes.

Pour out the peanuts after boiling soft.

Put some oil in the pan, throw the rock sugar into the pan and fry it to melt. When the rock sugar turns yellow, pour in the trotters and stir fry (frying the sugar meat first will make it easier to color and will be more fragrant).

Add light soy sauce, dark soy sauce, oyster sauce, a little salt and stir-fry evenly, then pour in peanuts and stir-fry evenly.

Put in an appropriate amount of water, cover the pot and simmer on medium heat for about 15-20 minutes.

Simmer until the water in the pot is dry, and you can start the pot.

As long as the trotters are not greasy to eat, they are usually made of belt bones and have a softer texture.
