Braised Pork on Rice

Wash all ingredients

Soak the dried shiitake mushrooms in the shiitake water, reserve the spare pork belly, and cut the dried and fresh shiitake mushrooms into small cubes

When the egg is cooked, cut the egg white part in a circle from the middle with a knife.

Stir the pork belly with a little oil in the pan until slightly yellow

Add shiitake mushrooms, stir fry

Add ointment

Add cooking wine

Add 1/3 of the shallot and stir fry

Add the soaked mushroom water and appropriate amount of water to the meat. At this time, add salt, sugar, braised pork buns, and dark soy sauce. Add the cut eggs and simmer for 1 hour.

After the eggs are colored, take out halfway and put 1/3 red onion crisp

Add the remaining green onion crisps to high heat for about 1 hour to collect the soup until thick
Tips:
1. Cut the egg in a circle and simmer into two halves, there will be a nice mark in the middle
2. As for the seasoning, I used the special ingredients for Taiwanese braised pork rice. If not available, light soy sauce can be used instead of ointment; cooking wine instead of rice wine; aniseed, cinnamon and bay leaves instead of braised meat; chicken essence and monosodium glutamate are both acceptable
