Braised Pork Trotters

Add rice wine to the pig's feet and blanch it in water.

After blanching, rinse the trotters well.

Put oil and rock sugar in the pot, and use a spatula to break the larger rock sugar particles.

Add the trotters and stir-fry slowly over medium-to-low heat. After one minute, add various seasonings and stir-fry.

Add the secret braised sauce and stir fry.

Add enough water at a time. After it is boiled on high heat, cover the low heat and simmer for about 90 minutes.

After simmering for about 90 minutes, collect the juice over high heat, and when the juice is low, pick up the pot and put it on a plate.
Tips:
The trotters can be cut by the store when they are bought.
Do not stir-fry the pig's feet too much before starting the pan. The pig's feet have been simmered for almost 2 hours before and after. The pig's feet are already very tender. If the pig's feet are fried too hard, the flesh will separate. Use a spatula to slowly stir-fry. Push the trotter slowly or shake the pot to make the trotter not sticky.
