Braised Pork Trotters
1.
Add the pork trotters with cooking wine and ginger slices to blanch water

Stir-fry with hot oil and rock sugar in a pot until brown, pour in the trotters and stir fry for color
3.
Pour in ginger, garlic, pepper, star anise, cinnamon and chili and stir fry evenly
4.
Pour the cooking wine, light soy sauce and dark soy sauce, add water to the trotters
5.
Cover and simmer for an hour
6.
Pour the salt chicken essence over high heat to collect the juice and bring it out of the pot
