Braised Pork with Small Potatoes

The small potatoes are cleaned by brushing, without peeling (some of them will peel off during washing), other materials are also processed, and ginger does not need to be peeled.

Boil the pork belly in cold water, remove and cut into even pieces.

When the pan is hot, pour in a little oil, add rock sugar and fry the sugar color on a low fire. When the rock sugar melts, the yellow bubbles will be added to the meat and stir fry to color. (Because the time is short, it is not easy to take pictures. The rock candy cannot be burnt, otherwise it will have a bitter taste.)

Add the seasoning and stir fry, then pour in boiling water or hot water (don't use cold water), simmer for 15 minutes on medium heat. (The meat is hard to cook, so cook it first.)

Add the potatoes again. If you feel that the water is really lacking, you can only heat the water. Then put in an appropriate amount of soy sauce, light soy sauce, and a little vinegar (you don't need to put it).

It can be simmered for about an hour. Add salt to taste in advance, the meat will be rotten (just try it with chopsticks), the potatoes are also floury, very fragrant
