Braised Potato Meatballs with Sauerkraut Ribs
1.
Prepare the required ingredients and wash them for later use.
2.
I bought the sauerkraut in a bag. It would be better if you pickled it at home. Wash one side with hot water, then soak in clean water. If the sour taste is heavy, wash it a few times.
3.
Boil the ribs in boiling water and remove them. Drain the water.
4.
Cut the green onion, ginger and garlic.
5.
The lard has melted, preheat the oil pan.
6.
The oil temperature is almost 50% hot. Add the ribs and stir fry until the color changes.
7.
Add the pepper noodles and the large-bodied noodles.
8.
Then add the green onion, ginger, garlic and fry it for a fragrance
9.
Pour in a little dark soy sauce for color, then add soy sauce to saute.
10.
Put the water on the ribs
11.
Then add a thick soup treasure, and an appropriate amount of salt. Add a little more salt, otherwise it won't taste good.
12.
When the ribs are half-ripe for about an hour and a half, squeeze out the sauerkraut and place them on top of the ribs. Pay attention to the soup in the pot, add a little water if it is not enough, don't add too much. Cover and simmer
13.
Insert the potatoes into potato shreds, sprinkle a layer of white flour on top, use the moisture in the potatoes to rub a ball.
14.
It's about the size of a ping-pong ball. Don't knead it too tightly or too loosely.
15.
The surface should be spread layer by layer. Sprinkle a layer and knead one or two, not all at once, until the kneading is done.
16.
Seeing that there is almost half of the soup left in the pot, put the balls on top and cover the pot.
17.
Pay attention to the amount of soup, so that each ball can fully absorb the soup.
18.
Until the soup is used up, it can be served on the plate.
19.
With a bowl of fragrant rice, you're done.
Tips:
1 Note that after washing the potatoes, put them aside to drain the water and insert them into silk. If the potato shreds are just washed out, there will be too much water, and the noodles will be very sticky and difficult to knead.
2 Don't be afraid to put too much lard, sauerkraut is very oil-absorbing, it tastes especially tasteful, and it is not greasy.
3 In general, add a little more salt to the soup, and the potato meatballs will taste a little bit saltier.
4 Put the potato balls in, never turn them back and forth, this is the easiest way to stick to the bottom of the pot, and you need to know the amount of water. Watch more and pay more attention.
