Cut off the legs, whiskers and gun of the prawns, cut the back of the shrimps, and pick off the shrimp threads. Cut ginger into thin strips and chop green onions, set aside.
(Because the shrimp legs and shrimp whiskers may be fried during the frying process, which will affect the taste and presentation of this dish. If you don't have that particular attention to eating at home, you can omit it)

Mix the cooking wine, soy sauce, pepper and sugar, and mix it into a bowl of sauce for later use.
(This seasoning sauce can be inferred. If tomato sauce is added here, it can be made into prawns in tomato sauce)

Put the bottom oil in the hot pan, pour the prawns when 60% hot, fry on low heat for about 5 minutes, the prawns will turn golden on both sides.
(This step will take 5 minutes to fry the front and back of the shrimp. Be sure to reduce the heat. When the shrimp is fried until bubbling, it means that the oil is out)

Pour in a spoonful of cooking wine and stir fry a few times, then add shredded ginger and stir fry for aroma, then pour in seasoning sauce and stir well.
(Pay attention to the order of this step, remove the fishy cooking wine, freshen the onion and ginger, and season the sauce, don’t mess it up)

Tips:
1. This dish does not need to add salt after adjusting the sauce in advance, otherwise the taste will be very strong.
2. In the process of braising, you must use a low heat and turn the prawns at any time. Because the sauce contains powdered sugar, it is easier to paste the pot. Of course, it is better to use teriyaki sauce.
3. If you need to marinate the prawns in advance, just add ginger and cooking wine, and the meat will be more tender.
