Braised Ribs

Material preparation: ribs, ginger, star anise, rock sugar.

Put the ribs and star anise into a pressure cooker, add a suitable amount of cold water, press for about 5 minutes to remove the ribs, and drain the water.

Put a little cooking oil in the wok. When 60% is hot, add rock sugar and stir fry.

When the rock sugar has melted and small bubbles appear at the bottom of the pot, add the ribs and ginger slices.

Stir-fry quickly, evenly coat the ribs with sugar, add light soy sauce, dark soy sauce, and salt, stir-fry for a few times, then pour in boiling water, bring the water to a boil on high heat, turn to medium heat and simmer for 10 minutes. Tips: Because the ribs have been pressed in a pressure cooker, they don’t need to be simmered for too long. If the ribs are just blanched in boiling water, they will need to be simmered for about 40 minutes here...

When the water is almost boiled, you can use a shovel to turn a few times to collect the juice and raise the pot.

Tips:
1. Slightly press the ribs in a pressure cooker for 5 minutes to reduce the cooking time.
2. When frying the sugar color, all the rock sugar melts, and the ribs can be put in when there are small bubbles at the bottom of the pot.
