Braised Rice with Pork Ribs and Potatoes

Spare ribs/potatoes/rice/carrot ginger slices/green onion/rock sugar/light soy sauce/rock sugar/salt

Tap the sliced ginger and set aside.

Pork ribs in a pot under cold water, add green onion knots, ginger slices, and top with cooking wine.

Boil and remove, rinse with cold water.

Cut potatoes and carrots into pieces with a hob and set aside.

Heat the pan with cold oil and add rock sugar.

Stir-fry with sugar over low heat.

Pour in the ribs and fry until the surface is colored.

Add light soy sauce and dark soy sauce and stir-fry evenly.

The rice is washed clean.

Add the ribs, and the cooking water is slightly less than usual.

Cook for 40 minutes.

Add carrots and potato pieces and cook for another 20 minutes.

Open the lid, add salt and chopped green onions, and stir well.

The rice absorbs the fat exuded from the ribs and is very creamy and delicious.
