Braised Rubber Fish

Empty the belly of the rubber fish, wash it, and cut it into two pieces.

Stir the garlic and chili in a hot pan with cold oil, pour in the rubber fish and fry it.

Add light soy sauce, cooking wine, rice vinegar, sugar, and salt. Because there is a lot of cooking wine, it tastes better without adding water.

Bring to a boil, simmer on a low fire.

When the juice is almost received, it can be out of the pot.
