Braised Spine
1.
Cut off and clean some involved parts of the purchased pork spine

Put the bones in the pot to foam
3.
Defoam after foaming
4.
Remove the bones after defoaming and prepare them with the seasoning
5.
Add canola oil to the pot and heat it up
6.
Put the spine into the pot and fry until slightly golden brown
7.
The bones have been fried to slightly golden
8.
Sprinkle enough dark soy on the fried meat to color
9.
Add the prepared ingredients to the pot
10.
Add hot water over the bones, pour in a few drops of cooking wine, three pieces of rock sugar, and simmer for 40 minutes
11.
Turn the pot intermittently during the stewing process to avoid muddy bottom
12.
After the juice is collected, the braised spine can be cooked
