Braised Spring Bamboo Shoots in Oil

Prepare the ingredients.

Peel the spring bamboo shoots, wash and cut into strips.

In a pot of boiling water, add spring bamboo shoots and cook for 3 minutes, remove and drain.

Add light soy sauce, dark soy sauce, sugar, appropriate amount of cooking wine, and water to the bowl and mix well.

Add twice as much oil to the pot as usual for cooking, pour in spring bamboo shoots and stir-fry until the skin is slightly yellow, then remove.

Leave a little base oil in the pot, pour the sauce, add water and flush with the bamboo shoots, cover and turn to medium-low heat and cook for about 20 minutes.

Finally, turn the heat to collect the juice.
