Braised Tilapia

One tilapia with a knife on the back.

Scallions, ginger, garlic, dried chili, star anise, fat diced pork.

Saute all the spices with oil.

Add the fish to the fried side

Fry the other side.
Add cooking wine, light soy sauce, sugar, salt, thirteen spices, white pepper, and water (just over the fish), and cook for 15 minutes. Order a spoonful of vinegar before starting the pot.

Tips:
If you want to make fish fresh, you must put some vinegar and some sugar.
There is another trick to making fish: be sure to put a little pig's fat to get rid of the fishy.
