Braised Tofu

Cut tofu into cubes and blanch it in boiling salt water for 1 minute; mince green onion, mince ginger garlic, mix rock sugar, oyster sauce, light soy sauce, dark soy sauce, cooking wine, rice vinegar, salt, and chili oil into seasoning juice for later use;

Warm the pan with cold oil, sauté the ginger garlic and scallion white after it is hot;

Put in the mixed seasoning juice and appropriate amount of broth or water;

Boil the sauce

Pour in the tofu and cook for 4 to 5 minutes on medium heat. When the soup is almost dry, sprinkle in the chicken essence and shake the bottom of the pot. Then pour in water starch, shake the pot again, or use a spatula to carefully stir 2 times to start the pot; sprinkle with chopped green onion when serving.
Tips:
1. When the tofu is blanched in salt water, the fishy smell and gypsum powder in the tofu can be removed, and the tofu can be prevented from breaking easily.
2. When the tofu is boiled in the pot, remember to shake the pot from time to time to avoid sticking to the pot. For old tofu, you can use a spatula to stir fry a few times.
3. Those who like soup can add more water or broth, and the soup does not need to be too dry.
