Braised Tofu with Egg Sauce

One piece of northern tofu, cut into pieces and blanch, add some salt when blanching. Boil the water for 1 minute and remove it.

Prepare the ingredients. Slice ginger and garlic, chopped green onion and parsley into sections.

Fill the pot with oil, add the beaten eggs to 50% of the oil, then add the soybean paste and stir fry. If it is dry, add a little water. Stir-fry and serve.

Wash the wok and pour a little oil into it. After the oil is hot, add ginger, garlic slices and pepper powder and stir fry to create a fragrance.

Lay the egg and stir fry.

Pour boiling water, then put the tofu in the pot, put an appropriate amount of salt, add the dark soy sauce and color, cover and simmer over medium-high heat.

Collect the sauce over high heat, add sugar and chicken essence to taste before starting the pan. Sprinkle a little diced ham on the pan, then sprinkle with chopped green onion and coriander.
Tips:
Soy sauce is very salty, so be careful not to put too much salt. The egg sauce can be used directly with soy sauce, and the diced ham can be used for decoration, and it is not necessary to put it.
