Braised Tofu with Shrimp and Egg Floss

Cut the tofu into small cubes.

Wash a small handful of prawn skins; shred the watery black fungus; shred the fresh mushrooms; shred the onions.

Beat 2 eggs, add a little white vinegar and beat well.

Pour oil in the pan and heat, pour in the egg liquid and fry into the minced pieces, and serve.

Put the chicken fat in a pot on a small fire to refine the oil and remove the oil residue.

Add chopped onion and sauté until fragrant.

Pour in tofu.

Then pour in shiitake mushrooms, black fungus, dried shrimp skin and egg floss.

Add an appropriate amount of soy sauce and stir well.

Cover and simmer for 5 minutes.

Add salt, pepper, and chicken bouillon, thicken with water starch, and serve. Sprinkle a little carrot for garnish.

Tips:
1. Add some white vinegar to the eggs to make the scrambled eggs more fluffy, and the scrambled eggs look like loose eggs.
