The nutritional value of winter bamboo shoots is simply too good. It is rich in crude fiber, which is very effective in promoting intestinal peristalsis, preventing and relieving constipation. In addition, its polysaccharides are said to have anti-cancer effects. But it should be noted that: because its oxalic acid content is not low, it will produce calcium oxalate when combined with calcium, so people with urinary stones and nephritis are advised to not eat or eat less.

It is said that this spring is still very cold. In this hot and cold season, eating fresh winter bamboo shoots is not of special significance, but Chao Dad will have some taste when matching some common ingredients with it. Let's take a look, and if you like it, take it to your dining table too!

Ingredients

Braised Winter Bamboo Shoots with Bacon

1. The first step is to peel and slice winter bamboo shoots. After peeling the shells, cut off the thick and old parts with hard roots and discard them. What is "crude old"? To be blunt: it's very hard to cut. Then another step is also very important: remove the bitterness of winter bamboo shoots. This bitterness is actually caused by too much oxalic acid. The treatment method is very simple. After cutting the bamboo shoots, soak them in a basin filled with cold salt water. Soak them in light salt water for about an hour, and then boil a pot of boiling water to remove the bamboo shoots from the cold salt water. Take it out and blanch it in boiling water for about two minutes, so that there is basically no bitterness and astringency, and the bamboo shoots are about 7 minutes old. If you are not at ease, after removing it from the boiling water, soak it in cold water for a few more minutes, so as to ensure that it is OK. As shown in the figure below, it is very intuitive. After the bamboo shoots are processed, drain the water for later use, then wash some bacon and slice them for later use.

When the fat part becomes transparent, you can remove it. Leave the bottom oil in the pot and throw a few Stir fragrant garlic, then immediately stir the bamboo shoots, cabbage stalks, and garlic roots into the pan for a few quick stir-fry.
