Bubble Pancakes

Add salt and sugar to the flour and mix well.

Knead into a smooth dough, cover with plastic wrap for about half an hour.

Divide into nine equal parts.

Knead into small balls and cover with plastic wrap and continue to 饧 for about 10 minutes.

Roll them out into round slices, pierce a hole in the middle with chopsticks, and leave for about 5 minutes.

Boil the oil to 80% hot, put in the cake dough, and gently press it with a slotted spoon to make the cake dough quickly expand and swell.
