Use a knife to divide the lotus seed into two halves and remove the lotus heart. (Don't throw the lotus heart, you can keep it for making tea to lower the fire)

Wash the lotus seeds and soak them overnight

Leave a little water (to be flush with the lotus seeds) and steam on the pot, turn to a low heat and steam for 30 minutes

Pour the lotus seeds and the steamed lotus seed water into the pot, add sugar, boil on low heat until it is crystal clear and viscous, turn off the heat, and serve.

Tips:
Don't boil over the fire when you boil the sugar. Add the lotus seeds when you boil it until it is crystal clear and bright. Be careful not to over-fry, otherwise it will become sandy. Be sure to boil it on a low heat!
