Candied Potatoes
1.
3 potatoes, peel off the skin and cut into hob pieces, put them in water, wash the surface starch, remove them and put them in a bowl.
2.
Add an appropriate amount of salt to the bowl, pick and marinate for 10 minutes.
3.
Put the right amount of oil in the pan, burn it to a high-temperature oil, add the potato pieces, stir with a spoon, fry until the surface of the potato is slightly yellow and hard, then pour it out. Re-burn the oil into high-temperature oil, add the potato pieces, fry them until the surface is golden and pour out for later use.
4.
Leave the bottom oil in the pot, add 3 tablespoons of white sugar and 1 tablespoon of cold water, turn the heat to low, stir constantly to boil the sugar. Before the white sugar changes color, quickly pour in the potato pieces, stir-fry evenly, and then start the pot. (When eating, prepare a bowl of cold water, dip it in water and eat it while it is hot)
