Cantonese Bean Paste Mooncake

Add liquid water to the invert syrup, stir and mix well. Add peanut oil to the mixed syrup and stir to mix well

Sift in flour and mix evenly, let stand for 1-2 hours

Divide the red bean paste into 50 grams and round it. There are 16 in total

Divide the crust dough into 25 grams each

Take a pie crust dough, flatten it in the palm of your hand, and put the five-core filling in the middle of the dough

Use two hands to slowly push up the pie crust to wrap the five-core filling. Try to make the pie crust evenly thick, without revealing the filling, after wrapping it, it will become a ball

The wrapped ball is thinly glued to a layer of fabric

Brush a thin layer of oil in the mold and put the ball dough into the moon cake mold

Press out the moon cake pattern on the baking tray, lift the moon cake mold, and it's ready

Spray some water on the surface of the mooncake

Put it in a preheated 200 degree oven and bake. Bake for about 5 minutes

After the mooncake pattern is set, take it out and brush the surface with egg yolk water

Bake at 180 degrees for 15-20 minutes
Tips:
1. Liquid soap is an alkaline aqueous solution with complex composition. If you can't buy it, you can mix edible soda noodles and water in a ratio of 1:3 instead (for example, 10 g of soda noodles with 30 grams of water can make 40 grams of soap).
2. The liquid egg yolk is a mixture of one egg yolk and 15 grams of egg white. One egg yolk can be used to brush more than 100 moon cakes. Only a little thin brush on the pattern is enough for each moon cake. Don't brush too much.
