1. The recipe is the amount of 9 moon cakes, which can be increased proportionally. For the egg yolk, you can use fresh salted duck yolks that are knocked out, or you can buy finished salted egg yolks. The finished salted egg yolks I use are soaked in peanut oil for several hours in advance.

2. Peanut oil, soap and invert syrup mix and stir well

4. Form a dough, cover with plastic wrap and wake up for 20 minutes.

5. The egg yolk is soaked in advance, take it out and wipe the surface with a paper towel, put it in the baking tray, preheat the oven 180 degrees

6. Bake for about 5-7 minutes.

7. The stuffing is about 16 grams each, and the dough is 20 grams each

8. Pack the egg yolk after it is cool. My egg yolk is medium size. The 50g moon cake mold used is a small egg yolk, or a medium egg yolk, 75g mold is fine. Use your palm to flatten the stuffing ball and put in the egg yolk

9. Slowly push the tiger's mouth to close the bag and round it.

10. Then squeeze the dough slightly, put it in the filling ball, and slowly close the mouth and wrap it up.

11. Knead.

12. Put it on the baking tray and brush the oil surface, not too much oil

13. The mold is pressed and the oil is brushed for good pressure and does not stick into the mold

14. The air furnace is preheated at 180 degrees for 15 minutes, and the single layer is generally about 10 minutes.

15. Take out the pot and just look at the coloring in place.

16. You can bake in multiple layers, the time is also 180 degrees, 10-12 minutes, because the yolk is almost cooked at the beginning, so observe the color of the moon cake to a satisfactory degree, and bake it for another half minute. The picture shows that I made about 4 times the amount according to the recipe

Tips:

Moon cakes are not suitable for eating just out of the pot. They are usually eaten every two days.
