Cantonese Style Bonito Peanut Porridge

Wash the peanuts and soak for more than 2 hours, wash the rice and soak for 20 minutes, beat the bonito with a hammer or the back of a knife until soft, tear off the bonito flakes and meat, and don’t use the bones.

Marinate the soaked rice and peanuts with some oil for 10 minutes

Bring water to a boil in the pot, pour in the marinated rice and peanuts and bring to a boil

Slowly boil until the rice grains bloom and the peanuts are soft and rotten

Clean the bonito and soak for 10 minutes

Remove the bonito, drain the water, pour in the cooked porridge and cook for 10 minutes

Add minced ginger

Sprinkle with chopped green onions when serving, and a pot of fragrant peanut bonito porridge is ready.
Tips:
Peanuts are harder and need to be soaked in advance to make them soft. Boiling water can be added to adjust the consistency of the porridge during the cooking process.
