Cantonese-style Preserved Egg and Lean Meat Porridge

Soak the rice glutinous rice in water and add oil. Don’t have a lot of oil. It’s about the size of a coin. Shake or stir well.

The shredded pork and green onion are marinated in cooking wine and add some starch. Any kind of sweet potato and peas can be used.

When cutting the preserved egg into small dices, the knife must be moist so that it will not be chopped. The size is as you like.

Pour oil in the pan and fry the shredded pork

Add water at a time and add enough water without adding water in the middle

After turning on the medium heat for 15 minutes, the rice grains are almost blooming. Add preserved eggs and some white pepper. If you throw it away, you don’t need to add it. Then turn off the heat until it becomes a porridge. Don’t add salt. Add salt to your bowl as much as you eat

I added some white pepper powder and preserved eggs and then turned off the heat to cover and simmer it. The fire power of each restaurant is different. After about 30 minutes, check it out. The fragrance will diffuse during this time. I don’t like too crushed porridge. So at most I would insert the chopsticks to the end and turn it around to see if the bottom is sticky

Tips:
If you are afraid of fishy, you can boil the shredded pork directly, and then put the rice in and start cooking. But if you are afraid of fishy, you can fry the shredded pork with oil and cook with the rice like I did. If the rice is very thin or advance the rice Use the back of a knife to chop or crush a cylinder such as a beer bottle or rolling pin. If you don’t like the porridge, you can use a spoon to stir it in the direction or if you like the grain of rice. Don’t stir it if you have enough water. Also ok
It is recommended that if you are afraid of fishery, you can cook more shredded ginger at the beginning and fish out some preserved eggs. Cut large preserved eggs. You can lay the preserved eggs earlier.
