Carp with Tofu and Sauerkraut

When buying the small crucian carp, let the stall owner kill it, and come back to clean the belly, especially to clean the black film in the belly. Put a small amount of salt to marinate for about half an hour.

Pickled cabbage is soaked and washed with water. Sauerkraut is a pickled food. There are some unhealthy substances in it, which should be dissolved first. Prepare the ginger slices, and cut into small sections of Tianjiao (referring to Tianjiao forgotten to take pictures).

Add an appropriate amount of oil to the pot, heat it, and fry the small crucian carp.

Scoop out the small crucian carp when both sides are slightly yellowed and set aside.

Heat the remaining oil in the pot, add sliced ginger and Zhitian pepper and sauté until fragrant.

Add chopped sauerkraut and stir fry. Stir-fry for a while, then add a small spoonful of Pixian bean paste and stir-fry.

After sauteing the sauerkraut, add a tablespoon of water, add the small crucian carp, cover and cook.

After boiling for a few minutes, add salt to taste (you have to taste it here, sauerkraut and Pixian bean paste have saltiness, first taste and then add salt), and then add water tofu (each piece is cut into two small pieces). Continue to stamp and burn.

Cook for about 20 minutes before and after, you can smell a strong fish aroma, and when the soup is milky white, add the green onion and cook for a while.
