Tips:
To make steamed cakes, you need to know the state of the noodles. Because of the large temperature difference across the country, do not judge the fermentation by time. The most accurate way is to look at the state. Insert your fingers into the dough in the first state, and it will not shrink as it is in the picture. Rebound means just right. If the dough sinks quickly, it means over-fermentation. At this time, you can add a small amount of edible alkali to neutralize it. If the dough rebounds quickly, it means that the fermentation is not in place. You can extend the fermentation time to improve it.
Don't open the lid of the pot when steaming, and steam it in one go.
