Mix all the ingredients in the main ingredient well to form a dough. Let the noodles stand for 1-2 hours. This can make the dough more fine and even.

Take 20 grams of dough, wrap 30 grams of red bean paste, and close the dough into a round shape. The recipe for bean paste filling is mentioned in my "Cantonese style jujube mud moon cake" recipe. I won't go into details here

After the dough is formed, sprinkle some flour to prevent it from sticking to the mold

Press the moon cake dough in the mold to make every detail and corner not missing. The details of the pattern are all on the press board

Use the pattern pressing board to gently press down, and while pressing, pass the contoured mold through the pressing board and slowly lift it up

Then that's it. The press board and moon cake dough are together. Just remove the moon cake carefully

Place the finished mooncakes on a baking tray lined with greased paper, and put them in the middle of the preheated oven. Heat up and down at 170 degrees for about 20 minutes. The specific time and temperature should be increased or decreased according to the size of the biscuit mold

Bake for five minutes. After the surface is set, brush the surface with a mixture of egg yolk and a little water to color it, and then bake it.
Tips:
1. Today’s time is tight, I’m a little anxious to bake, the firepower is a little bit higher, some of the surface has a little crack, and it will not be visible after the oil is returned for a few days after sealing
2. If the surface of the mooncake is swollen and cracked after baking, the filling usually contains more water, or the oven temperature is too high. Reduce the furnace temperature and appropriately extend the baking time
