Caterpillar Bread
1.
Mix all the ingredients (except butter), knead it into a smooth dough, add butter and knead it to the complete stage, and carry out basic fermentation
2.
Prove the dough to 2 times its size
3.
Slightly flatten the dough, divide the dough into 4 equal parts (about 90 grams each) with a dough cutter, close the weighed dough, round it, cover with plastic wrap and relax for 15 minutes
4.
Use a rolling pin to roll the dough into a beef tongue shape
5.
Lift the rolled dough, turn it over, fold both sides toward the center
6.
Fold inward and squeeze the mouth tightly and turn it over. (I added red bean paste to two of them)
7.
Place the shaped dough evenly on a baking sheet covered with tarp
8.
Put the baking tray in the oven, put two small cups of cold water at the bottom of the oven, turn on the "fermentation" function of the oven, and carry out the second fermentation, about 40-60 minutes
9.
During the second fermentation of the dough, make a puff batter for surface decoration:
a Put the salad oil, water, and softened butter in a basin and boil over a low heat until it boils.
10.
b Turn off the heat and add high-gluten flour
11.
c quickly stir evenly with chopsticks
12.
d After the dough is brought to body temperature, add the beaten egg liquid in portions
13.
e. Add a little egg liquid, stir again, and repeat the process to stir the batter into a batter that can lift sharp corners. (If the batter is too dry, add a little egg liquid
14.
f Put the No. 7 round mouth flower mouth into the piping bag, and put the mixed batter into the squeezing bag
15.
When the dough in the mold rises to twice its size, brush the surface with whole egg liquid.
16.
Squeeze the batter onto the fermented bread and brush with egg wash.
17.
Preheat the oven at 180 degrees for 10 minutes [Caterpillar bread has different tempers in different ovens, my actual operation is 150 degrees on the heat and 170 degrees on the lower]. In order to save electricity, I put the bread in two baking trays at the same time and bake it together. The original baking tray is placed on the second floor, and the three-energy baking tray is placed on the bottom layer. Bake for 7 minutes; switch the positions of the two baking trays and bake for 6 minutes; finally Change the positions of the two baking trays again, cover the upper layer with tin foil, adjust the upper tube to 140 degrees and the temperature of the lower tube unchanged, bake for 7 minutes, a total of 20 minutes.
18.
After baking the finished product, pour out the mold and put it on the baking net to let cool.
19.
Break the softness~
Tips:
1. Since each oven has a different temper, it is necessary to master the temper of the oven and be good friends with it. The recipe is 170 degrees for 20 minutes, and my actual operation is to heat up to 150 degrees and down to 170 degrees.
2. In order to save electricity, I put the bread in the two baking trays at the same time to bake together. Note that: the original baking tray is thinner and the second layer is placed, and the three-energy baking tray is heated slowly at the bottom layer, and bake for 7 minutes; replace the two Bake for 6 minutes in two baking trays; finally, change the positions of the two baking trays again, cover the upper layer with tin foil, adjust the upper tube to 140 degrees and keep the temperature of the lower tube unchanged, and bake for 7 minutes for a total of 20 minutes. Bake 8 noodles in two layers in one oven, so enjoyable!
